Ingredients:


1: 4 large eggs, separated (room temperature)


2: 1 cup all-purpose flour


  • 3: 1 cup granulated sugar

4: 1 teaspoon baking powder

Instructions:
    1. Preheat your oven to 325°F (165°C). Grease and flour a 9-inch round cake pan. You can also use parchment paper to line the bottom for easier removal.

    2. In a large mixing bowl, sift together the all-purpose flour, half of the granulated sugar (1/2 cup), baking powder, and salt. Set aside.

    3. In a separate bowl, whisk together the egg yolks, vegetable oil or melted butter, milk, and vanilla extract until well combined.

    4. Gradually add the wet ingredients to the dry ingredients, stirring gently until the batter is smooth and free of lumps. Do not overmix.

    5. In another clean and dry mixing bowl, beat the egg whites with an electric mixer on medium speed until they become frothy. Add the cream of tartar (if using) and continue to beat until soft peaks form.

    6. Gradually add the remaining half of the granulated sugar (1/2 cup) to the egg whites while continuing to beat. Beat until stiff peaks form. The egg whites should be glossy and hold their shape when the beaters are lifted.

    7. Gently fold the beaten egg whites into the batter using a rubber spatula. Be careful not to deflate the egg whites; fold until just combined.

    8. Pour the batter into the prepared cake pan and spread it evenly.

    9. Bake the cake in the preheated oven for about 35-40 minutes or until a toothpick inserted into the center comes out clean.

    10. Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10 minutes.

    11. Run a knife around the edges of the cake to loosen it from the pan. Carefully invert the cake onto a wire rack and let it cool completely.

    12. If desired, dust the top of the cooled cake with powdered sugar for a decorative finish.
